Cream cheese filling 

  • 8 oz cream cheese 
  • 1 cup white sugar
  • 1 tsp vanilla extract
  • 1 tsp lemon juice
  • 1 liter whipped dessert topping
  • 4 cups fresh strawberries
  • fresh mint

Graham cracker crumble

  • 2 cups graham crackers 
  • 1/2 cup butter
  • 3/4 cup brown sugar


Prepare the strawberries by washing, removing stems and setting aside. Remember to save a few berries for garnish. Soften the cream cheese for a few seconds in the microwave so it becomes easier to combine with all the wet ingredients.

Add the vanilla extract, lemon juice, sugar and stir until everything is mixed well.

Add the whipped dessert topping and the fresh strawberries. You can use a potato masher to help crush and mix the berries. Once the ingredients are all combined, place in the freezer until you are ready to start assembling your cheesecakes in the mason jars. 

While the mixture is setting, prepare the graham cracker crumble. Crush 2 cups of graham crackers with a rolling pin. Melt the butter and add into a bowl along with the brown sugar making sure everything is evenly combined.

Now it's time to start assembling your cheesecakes. Create layers with the graham crumble and cheescake filling. Place the crumble at the bottom of the jar and then carefully spoon in the cheesecake filling.

If you have a few extra berries add a few to the middle layer. Who doesn't like an extra strawberry bite? If you want a smaller serving size, serve in a low ball tumbler glass. Allow a few hours in the fridge to set before garnishing with some fresh mint.
