Hummus Breakfast Burrito
With a prep and cook time of five minutes apiece, this burrito will have you and your family rolling out the door. Yields six servings.

- 1 can black beans
- 1 pouch (6 oz) hummus packet
- 6 eggs, lightly beaten
- 6 8-inch flour tortillas, warmed
- 1 tbsp butter
- Salt and black pepper to taste
- Cheddar cheese, shredded
Drain and rinse black beans.
Add beans to food processor.
Add contents of hummus stir-in pouch. Blend to desired consistency.
Heat butter in 10-inch non-stick skillet until sizzling. Season eggs with salt and pepper. Add eggs to skillet. Cook eggs until done, stirring occasionally.
Warm tortillas in microwave 20 to 30 seconds or until warm.
Spread each tortilla with 2 to 3 tablespoons of hummus.
Divide egg mixture into six parts. Spoon egg mixture over hummus.
Sprinkle with cheddar cheese and drizzle with salsa, if desired.
Roll each tortilla up burrito style.
